National Peach Month

DID YOU know that August is officially National Peach Month?

The peach is considered to be a symbol of immortality and unity, so it seems very apt right now to try our top recipes below…

Peach Cobbler
This comforting no-fuss dessert can be on the table in under an hour and is a firm family favourite when served with vanilla ice cream. Simply lay peach slices into the base of a baking dishe and sprinkle with sugar and ground ginger. Then whizz together flour, sugar, baking powder, cinnamon, butter and an egg until it resembles a thick dough. Spoon the dough in dollops on top of the peaches, sprinkle with caster sugar and bake until golden – delish!

Peach Iced Tea
Beat the heat on summer days (if they ever arrive) with a refreshing glass of peach iced tea. All you need is sugar, ripe peaches and teabags. Bring sugar to boil, add chopped peaches and cook until soft. Then get your anger out by mashing the peaches! Leave to infuse then sieve the syrup through. Next up is to steep teabags and leave to cool, once chilled stir in the peach syrup and top with sparking water serve with peach slices!

Peach Panzanella
A perfect addition to a summer menu, this savoury peach salad goes perfect with barbecued chicken. First off, make the dressing by whisking olive oil, lemon juice and capers. Then scatter brioche cubes over a baking sheet and pop in the oven until golden and crispy. Next up, arrange the lettuce, add peach wedges and torn buffalo mozzarella. Add the dressing and scatter thyme, basil and the brioche croutons – you’ll soon be whisked away to the sunnier climates of the med.
