THIS WEEK marks Great British Pea Week and here at Castlegate we love those tiny green nutritional wonders.

To celebrate we have picked our top pea recipes for starters, mains and dessert, let us know if you try any out…

Pea & Ham Soup
Frozen peas are a great product and perfect for making a quick and satisfying soup and even though it’s the middle of summer, you never know when we might have a cold and blustery day! This meaty and vibrant soup is great for using up any small bits of cooked gammon and leftovers will freeze well. Don’t forget to team it up with a fresh brown bun from Blue Corn Bakery.

Pea Risotto
This delish and fresh main meal alternative makes the most of peas and even more of a bonus, it’s quick to whip up after a hard day’s work. *Whisper* don’t worry we won’t judge as you pour a bit of white wine into the pan and a bit more into your glass. Remember to drizzle olive oil and grate tons of parmesan cheese to make it authentically Italian.

Pea Mousse
Please don’t let the colour put you off, this creamy pea mousse is sure to impress your dinner guests plus it’s bang on trend. You may think peas don’t belong in the dessert category but double cream, castor sugar and white chocolate certainly do. Decorate and garnish with pea shoots and edible flowers for that wow factor – you will soon be the talk of the town!
